PEPPERMINT HOT COCOA COOKIES

  • ~15 minutes prep + 30–60 minutes chill + 10 minutes bake

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup coconut sugar
  • 1/4 cup white sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp peppermint extract
  • 1 1/4 cup gluten free flour
  • 1/4 cup chocolate protein powder
  • 1 sachet Beck’s Broth Mint Hot Chocolate
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 tbsp mini chocolate chips (+ more for topping)
  • 1/4 cup crushed candy cane

These peppermint hot cocoa cookies are basically a holiday hug with benefits ❄️🍫

Soft, chewy, and sprinkled with candy cane crunch, they’re made with a boost from Beck’s Broth Mint Hot Chocolate plus a little protein powder for extra nourishment. Perfect for gifting, cookie swaps, or a cozy night in when you want something festive that still feels kinda wholesome.

Directions

  1. Beat butter + sugars 1–2 min. Add egg, vanilla, peppermint, and Beck’s Broth packet, mix 1 min.
  2. In another bowl, whisk dry ingredients.
  3. Add dry to wet slowly, mix, then fold in chocolate chips.
  4. Chill dough 30–60 min. Preheat oven to 350°F.
  5. Roll into 15 balls, place on parchment-lined sheet, gently press with a fork. Top with candy cane + extra chips. Bake 10 min. Cool and enjoy.
